Beef Barley Soup Recipe: Ingredients: 1 lb beef stew meat (cut into cubes)1 cup barley (rinsed)4 cups beef broth2 cups water2 medium carrots (sliced)1 celery stalk (chopped)1 onion (chopped)2 cloves garlic (minced)1 bay leaf1 tsp dried thymeSalt and pepper to taste2 tbsp olive oilInstructions: Cook the beef: In a large pot, heat olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef and set it aside.Sauté the vegetables: In the same pot, add the onions, garlic, carrots, and celery. Cook for 3-4 minutes until the vegetables are soft.Simmer the soup: Return the beef to the pot. Add the beef broth, water, barley, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 1 to 1.5 hours, or until the beef is tender and the barley is cooked through.Adjust seasoning: Taste the soup and adjust seasoning with more salt and pepper if necessary.Serve: Remove the bay leaf, and ladle the soup into bowls.
